October the 24th is World Tripe Day.

Today is a day to promote tripe as a vital part of sustainable farm-to-fork, nose-to-tail agriculture, as well as a day to celebrate the many ways of preparing and savouring the taste and distinctive aroma of tripe.

You get to indulge in tripe to your heart’s content today.

Look for Trippa alla Romana in your local Italian restaurant. Chinese, Polish, French and Mexican cuisines also offer tasty opportunities to indulge in tripe. Have you ever had the Mexican stewed-tripe dish called ‘menudo’?

People eat other meat, even other offal such as liver or kidney, without thinking too much about it. But tripe provokes an entirely different reaction.

Not only is it the “butt” of many jokes, but diners may flee at the very appearance of it on a menu.

It was so popular in the Lancashire area of England that it was called “Lancashire calamari”, but after World War Two, the English-speaking world turned against tripe (as well as mutton).

According to the Tripe Marketing board website, the 24th of October picked was picked because the English diarist Samuel Pepys had tripe on the 24th of October:

“Tripe is mentioned twice in Samuel Pepys Diary. On 24 October 1662, Pepys wrote:

‘So home and dined there with my wife upon a most excellent dish of tripes of my own directing’
